Chocolate Berry Bombs

Yes, they are sugar free. Yes, they taste incredible. Yes, you will want to eat the whole batch at once. These chocolate bliss balls are filled with fibre, protein and omega 3's. This recipe makes around 8 reasonably sized bliss balls. I hope you have fun whipping them up in the kitchen!

Ingredients:
For the chocolate bombs:
1/2 cup almond meal
1/2 cup shredded coconut
2 Tbs cacao powder
2 Tbs chia seeds
2 Tbs date paste
1/4 tsp salt
2 Tbs peanut butter
2 Tbs coconut oil
For the raspberry filling:
2 cups rasberries
3 tbs rice malt syrup
2tbs chia seeds
1tsp vanilla extract

Method:
Heat the oven to 180°C and line a tray with baking paper.
To make the raspberry filling, add all of the ingredients into a medium sized pot and stir at a medium - high heat until all the berries have broken down and the mixture has thickened. Once the mixture has thickened allow it to cool by placing it in a jar and putting it into the freezer.
In a bowl, measure the almond meal, shredded coconut, cacao powder, chia seeds and salt and mix with a spoon.
In a seperate bowl, mix the remaining ingredients until well combined.
Pour the wet ingredients into the dry ingredients and mix until combined. The mixture should start to form together like a cookie dough.
Using a spoon, scoop up portions of the mixture, roll them into balls and set them on the prepared tray. Here if where you can shape the bombs to fit your preference: I like mine to be reasonably big so there is more room for the filling. If the mixture breaks apart slightly, you can add a splash of water, plant milk or some additional coconut oil.
Break each bomb in half and use your fingers to create a small dent in each half and fill it with jam.
Now put the two halves together and mould it back into a ball, keeping the raspberry filling inside.
Place the finish chocolate bombs on the prepared baking tray.
Cook the chocolate bombs for 5-7 minutes and allow them to cool before serving.
These chocolate bombs are honestly so delicious that I ate the entire batch with in a few days!
