Healthy Pizza Recipe

Who doesn't love pizza? People often have the misconception that eating healthy means you can't enjoy your favourite foods, however, you can make healthy alternatives to anything! This pizza recipe is gluten free, vegan and packed with nutritious ingredients.

Delicious Healthy Salmon pizza recipe
Ingredients:
- 1 Gluten free pizza base (My favourite is by the brand Gluten freedom as they crisp up well)
- 1Tbs tomato paste or tomato sauce
- Dairy free cheddar, grated (I used the brand Alternative Dairy Co)
- 100g smoked salmon, cut into small pieces
- 1 spring onion, chopped finely
- A handful of baby spinach
- 1/2 a capsicum, chopped
- A handful of fresh coriander, roughly chopped
- 2tsp Mexican seasoning (I used the Mrs Rogers brand. Alternatively, you can sprinkle over a mix of paprika, oregano and cumin)

Instructions:
Preheat the oven to 180°C and line a tray with baking paper.
Place the pizza base on the baking tray and using the back of a spoon, spread the tomato paste around the base in a circular motion.
Sprinkle the cheese evenly over the pizza base, ensuring that the cheese spreads right out to the edge of the pizza base.
Evenly place the salmon, spring onion, spinach, capsicum and coriander onto the pizza base.
Sprinkle the Mexican spice (or spice of your choice) and some extra cheese over the pizza.
Put the pizza into the oven and cook for 10-15min or until the cheese has melted and the edges are crispy.
Once the pizza has been taken out of the oven, allow it to cool slightly. Then cut the pizza into 12 slices and serve.
